When it comes to pizza, lasagna, French fries, chabu or even regular desserts these days, you’ll need to have cheese if you want to make these menu items more appetizing.  And some of these menu items already use cheese as a primary ingredient.  Cheese is also a great topping that enhances flavor. When restaurant owners create cheese topping menu items, they are guaranteed to boost the value of their foods. So, what kinds of cheese do you need to use?
There are lots of different kinds of cheese you can use in your menu items. The most popular kind of cheese is probably the stretchy kind. The more stretchy it is, the more fun it is to eat. This is a great selling point for restaurants. And this stretchy, stringy cheese is known as mozzarella cheese. It originated in Italy and is made from either cow or buffalo milk. The cheese offers a soft texture while appearing light yellow or cream in color. It is smooth and contains a lot of moisture, and it is very stretchy. In addition, it doesn't have a strong smell, because it is fresh cheese and not fermented. Menu items that use mozzarella cheese include lasagna, spinach baked in cheese, pizza and fried cheese.
Mozzarella is divided into two types depending on production as follows:
1. Fresh mozzarella. It is a high-moisture cheese that is not fermented. It is stored in salt water and has a short storage life. Normally, it can last about two weeks after production. Often, it is eaten fresh.
2. Low-moisture mozzarella. This cheese has less moisture than fresh mozzarella with a storage life of up to 12 months, depending on temperature such as whether it is refrigerated or frozen. Low-moisture mozzarella is popularly scraped or diced into small pieces for convenient use. This type is popularly used in cooking and bakery such as pizza, lasagna and spinach baked in cheese.

The following are the key ingredients of mozzarella cheese:
1. milk; 2. starter culture; and 3. rennet.
In addition to mozzarella, which is a stretchy cheese, another kind of cheese that is identical or similar to mozzarella cheese is pizza or pizza topping cheese. It includes cheeses and various milk products designed specifically for pizza production. These include processed cheeses made to be similar to mozzarella cheese. Pizza cheese can be any kind of cheese that is suitable for a pizza.

Pizza cheese ingredients:
1. milk; 2. vegetable oil; 3. starter culture; 4. rennet; 5. Salt; and 6. other ingredients.

What kind of cheese is delicious?
Although cheese is a dairy product made with the addition of bacteria, different kinds of cheese differ, depending on locality. Flavor, fragrance and quality, as well as names, differ.  And cheese dishes are not always exact in regards to how much cheese should be added. It all depends on preferences and experimentation. Some menu items might contain a lot of different kinds of cheeses. Cheese can even be used in Thai cuisine. However, it's necessary to learn about some properties of different kinds of cheese such as parmesan cheese and mozzarella cheese, which have relatively mild flavors and do not strongly alter food flavor, unlike the salty cheddar cheese and Edam cheese. People who want rich cheese flavors and smells might want to add cheddar.
